Exercise 9A: Preparation, Service and Evaluation of
Regional Recipes of Regions I, II and CAR
I. Introduction
Panagcacadua! In Ilocano it means fellowship, this was the very intention of the group for their preparation, service and evaluation of regional recipes from Regions I. II and CAR. To share with their classmates the creative dishes, the warm hospitality and the festive ambiance of the three regions from the 17 regions of the Philippines.
Region 1 is also called as the Ilocos Region located in the northwestern part of Luzon with land area o 12, 840.19 square kilometers. This region is bounded by Bangui Bay at the North, Central Cordillera Range at the East, South China Sea at the West and Central Luzon Region at the South. Its regional center is San Fernando City, La Union with provinces that include Ilocos Norte, Ilocos Sur, La Union and Pangasinan. The region is dominated by the Ilocanos who are located in the provinces of Ilocos Norte, next are the Pangasinenses, then the Igorots. Ilocano and Pangasinense are the distinctive dialects in this region. Ilocano is generally used by the people, whereas Pangasinense is used in certain laces in Pangasinan. The main industries in this region comprises agriculture, salt making, bagoong making, tobacco making, mining, tourism, cottage production, and fishing. A little known fact is that this region is the 3rd largest exporter of mangoes as well as being one of the primary producers of tobacco in the country. The region is rich in agricultural land which allows it to produce a cornucopia of products such as saluyot, root crops, coconut, corn, mango, tobacco, and rice. The dominance of sea and water areas surrounding allows seafood resources such as fishes to be of abundance as well.
